Ground Beef Enchilada Casserole

A hearty and flavorful casserole featuring ground beef, enchilada sauce, and cheese, perfect for a weeknight dinner.

  • 1 lb Ground beef
  • 1 cup Chopped onion
  • 1 tsp Chili powder
  • 0.5 tsp Cumin
  • 1 can (15 oz) Enchilada sauce
  • 1 cup Shredded cheddar cheese
  • 6 count Corn tortillas

Preparation Steps

  • Brown ground beef in a large skillet. Drain excess fat.
  • Add onion, chili powder, and cumin. Cook until onion is softened.
  • Stir in enchilada sauce. Simmer for 5 minutes.
  • Spread a thin layer of sauce in the bottom of a 9x13 inch baking dish.
  • Layer tortillas, beef mixture, and cheese. Repeat layers.
  • Bake at 350°F (175°C) for 20-25 minutes, or until heated through and bubbly.

Notes

Serve hot with your favorite toppings, such as sour cream, guacamole, or salsa.
