Grilled Chicken and Peach Skewers

Juicy grilled chicken marinated in a tangy lime-cilantro dressing, paired with sweet, caramelized peaches for a delightful summer meal.

Ingredients
  

Chicken Marinade

  • 0.5 cup olive oil
  • 0.25 cup fresh lime juice
  • 0.25 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Skewers

  • 1.5 pounds boneless, skinless chicken breasts cut into 1-inch cubes
  • 3 large peaches pitted and cut into 1-inch wedges
  • 1 medium red onion cut into 1-inch pieces

Preparation Steps

  • In a bowl, whisk together olive oil, lime juice, cilantro, garlic, cumin, salt, and pepper. Add the chicken cubes and toss to coat. Marinate for at least 30 minutes or up to 2 hours in the refrigerator.
  • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  • Preheat your grill to medium-high heat.
  • Thread the marinated chicken, peach wedges, and red onion pieces onto the skewers, alternating ingredients.
  • Grill the skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and the peaches are tender and slightly caramelized.
  • Remove from grill and let rest for a few minutes before serving.

Notes

Serve these skewers on their own, or with a side of rice or a fresh salad. Garnish with extra cilantro if desired.
