  • 8 oz penne pasta cooked and cooled
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 0.5 cup red onion thinly sliced
  • 0.5 cup kalamata olives pitted and halved
  • 0.5 cup feta cheese crumbled
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Preparation Steps

  • In a large pot of salted boiling water, cook pasta according to package instructions until al dente. Drain and let cool.
  • In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
  • In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and black pepper.
  • Pour dressing over salad and toss to combine. Serve chilled or at room temperature.

Notes

For added freshness, garnish with chopped fresh parsley before serving.
