gluten-free shortbread cookies

These delicious gluten-free shortbread cookies are easy to make and perfect for any occasion. They're buttery, crumbly, and melt in your mouth!

  • 1 cup gluten-free all-purpose flour blend Make sure your gluten-free flour blend is designed for baking.
  • 0.5 cup powdered sugar
  • 0.5 cup unsalted butter, cold and cut into cubes
  • 1 teaspoon vanilla extract

Preparation Steps

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the gluten-free flour and powdered sugar.
  • Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  • Stir in the vanilla extract.
  • Form the dough into a disc, wrap it in plastic wrap, and chill for at least 30 minutes.
  • Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Use cookie cutters to cut out shapes.
  • Place the cookies on the prepared baking sheet and bake for 10-12 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week.
