Ingredients
- 1/2 cup unsalted butter melted and cooled slightly
- 3/4 cup granulated sugar
- 2 large eggs room temperature
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest finely grated
- 1 cup gluten-free all-purpose flour blend with xanthan gum
- 1/4 teaspoon baking powder
- 1/4 teaspoon fine salt
- 1 cup powdered sugar for glaze
- 2 tablespoons fresh lemon juice for glaze
Instructions
Heat the oven to 350°F. Line an 8-inch square pan with parchment, leaving an overhang.
Whisk the melted butter and granulated sugar until smooth. Whisk in the eggs, lemon juice, and lemon zest.
Stir the gluten-free flour, baking powder, and salt together in a separate bowl. Fold the dry ingredients into the wet mixture just until no dry streaks remain.
Spread the batter evenly in the prepared pan. Bake for 23 to 25 minutes, until the edges are lightly golden and the center is set.
Cool completely in the pan. Whisk the powdered sugar and glaze lemon juice until smooth, spread over the cooled brownies, then cut into 16 squares.
