Pat the pork chops dry with paper towels and season generously with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Sear pork chops for 3-4 minutes per side until golden brown.
Remove pork chops from the skillet and set aside. Reduce heat to medium.
Add butter to the skillet. Once melted, add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn.
Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes.
Return the pork chops to the skillet. Spoon the garlic butter sauce over the chops. Cook for another 5-7 minutes, or until the pork is cooked through (internal temperature of 145°F or 63°C).
Stir in fresh chopped parsley. Serve the pork chops immediately with the garlic butter sauce poured over them.

Serve with mashed potatoes or a side salad for a complete meal.
