Ingredients
  

Dry Ingredients

  • 2.25 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt

Wet Ingredients

  • 1 cup unsalted butter, softened
  • 0.75 cup granulated sugar
  • 0.75 cup packed light brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 0.5 cup rainbow sprinkles

Preparation Steps

  • Preheat the oven to 375°F (190°C). Line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy and smooth.
  • Beat in the eggs one at a time, then mix in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  • Fold in the rainbow sprinkles until evenly distributed throughout the dough.
  • Scoop rounded tablespoons of dough and roll into balls. Place 2 inches apart on prepared baking sheets.
  • Bake for 10–12 minutes, or until the edges are lightly golden but the centers still look soft.
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

These cookies stay soft for days when stored in an airtight container at room temperature.
