  • 1 cup powdered sugar
  • 0.5 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 0.5 cup marshmallow fluff

Preparation Steps

  • In a large mixing bowl, combine the peanut butter, powdered sugar, softened butter, vanilla extract, and salt. Mix until smooth and well combined.
  • Divide the mixture into two equal portions. Set one portion aside.
  • Add the marshmallow fluff to the second portion and mix thoroughly until evenly incorporated.
  • Roll each portion into small balls (about 1 tablespoon each) and place them on a parchment-lined baking sheet.
  • Flatten each ball slightly with your palm or the bottom of a glass.
  • Refrigerate for at least 30 minutes before serving to allow the cookies to set.

Notes

These cookies are best served chilled and make a great no-bake dessert option.
