  • 1/4 cup hazelnuts toasted
  • 2 tablespoons sesame seeds toasted
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon fine salt
  • 3 tablespoons olive oil

  • Preheat the oven to 375°F and line a large baking sheet with parchment paper.
  • Pulse the toasted hazelnuts, sesame seeds, ground coriander, ground cumin, and fine salt until the mixture is coarse, not powdery.
  • Arrange the pita wedges in a single layer on the prepared baking sheet and brush both sides lightly with olive oil.
  • Sprinkle the dukkah evenly over the pita wedges and press gently so the seasoning adheres.
  • Bake for 12 to 15 minutes, turning once, until the pita chips are crisp and golden at the edges.
  • Cool the chips on the baking sheet for 5 minutes before serving.

Notes

Keep the dukkah coarse so the toasted nut and sesame texture remains distinct.
Spread the wedges in one layer for even browning.
