Easy Stuffed Pepper Casserole

A hearty, one-dish meal featuring ground beef, rice, tomatoes, and cheese baked in a casserole for a family-friendly dinner that's easy to prepare.

  • 1 lb ground beef
  • 1 cup uncooked white rice
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1 small onion chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 cup shredded cheddar cheese

Preparation Steps

  • Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  • In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
  • Add onion and garlic to the skillet; cook until softened, about 3-4 minutes.
  • Stir in rice, diced tomatoes with juice, tomato sauce, oregano, salt, and pepper. Bring to a simmer.
  • Transfer mixture to the prepared baking dish and spread evenly.
  • Sprinkle shredded cheddar cheese evenly over the top.
  • Bake uncovered for 40-45 minutes, or until rice is tender and cheese is melted and lightly golden.

Notes

Serve hot with a side salad or crusty bread for a complete meal.
