Easy Sourdough Discard Banana Bread

Ingredients
- 1 1/2 cups all-purpose flour spooned and leveled
- 1 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1/2 cup unsalted butter melted and cooled
- 3/4 cup brown sugar packed
- 2 large ripe bananas mashed
- 1 cup sourdough discard unfed, room temperature
- 1 large egg beaten
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
Instructions
Heat the oven to 350°F. Grease a 9-by-5-inch loaf pan and line it with a strip of parchment.
Whisk the flour, baking soda, and salt in a medium bowl.
In a large bowl, whisk the melted butter and brown sugar. Add the mashed bananas, sourdough discard, egg, and vanilla, whisking until smooth.
Fold the dry ingredients into the wet mixture just until no dry streaks remain. Fold in the walnuts if using; do not overmix.
Scrape the batter into the prepared pan and smooth the top. Bake for 50 to 55 minutes, until the center springs back lightly and a tester comes out with a few moist crumbs.
Cool in the pan for 15 minutes, then lift the loaf onto a rack and cool completely before slicing.
