Easy Slow Cooker Chicken with Green Chile

A flavorful and easy one-pot meal featuring tender chicken simmered in a rich green chile sauce, perfect for busy weeknights.

  • 2 lbs boneless, skinless chicken thighs, cut into chunks
  • 1 can diced green chiles, drained 15 oz
  • 1 can condensed cream of chicken soup 10 oz
  • 1 cup chicken broth
  • 1 tsp ground cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • tsp salt to taste
  • tsp pepper to taste
  • chopped fresh cilantro optional garnish

Preparation Steps

  • Place chicken chunks in the slow cooker.
  • In a bowl, mix together diced green chiles, cream of chicken soup, chicken broth, cumin, garlic powder, onion powder, salt, and pepper.
  • Pour the mixture over the chicken in the slow cooker and stir gently to combine.
  • Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is tender and cooked through.
  • Shred the chicken with two forks if desired, and serve warm. Garnish with fresh cilantro if using.

Notes

Perfect served over rice or with warm tortillas. This recipe can be made ahead and reheated.
