Cucumber Tomato Salad

A refreshing and simple cucumber tomato salad with a light vinaigrette, perfect as a side dish or light meal.

  • 2 medium cucumbers sliced
  • 3 medium tomatoes chopped
  • 0.5 small red onion thinly sliced
  • 0.25 cup fresh parsley chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon dried oregano optional

Preparation Steps

  • In a large bowl, combine the sliced cucumbers, chopped tomatoes, red onion, and parsley.
  • In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, pepper, and oregano (if using) until well combined.
  • Pour the dressing over the cucumber and tomato mixture and toss gently to coat.
  • Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.
  • Serve chilled or at room temperature.

Notes

This salad is best served fresh but can be stored in the refrigerator for up to 2 hours before serving.
