Crustless Coconut Pie

  • 0.5 cup unsalted butter melted
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 cup shredded coconut sweetened
  • 1 cup milk whole
  • 1 teaspoon vanilla extract

  • Preheat your oven to 350°F (175°C). Grease a 9-inch pie plate.
  • In a large bowl, whisk together the melted butter and granulated sugar until well combined.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the shredded coconut, milk, and vanilla extract until everything is just incorporated.
  • Pour the mixture into the prepared pie plate.
  • Bake for 35-45 minutes, or until the center is set and the top is golden brown.
  • Let the pie cool completely on a wire rack before slicing and serving.

Notes

This pie is delicious served warm or chilled. A dollop of whipped cream or a sprinkle of toasted coconut on top is a lovely addition.
