  • 1 lb Yukon gold potatoes
  • 1 head Broccoli Cut into florets
  • 4 cups Chicken broth
  • 1 cup Milk
  • 1 cup Shredded cheddar cheese
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Preparation Steps

  • Peel and chop potatoes. Cut broccoli into florets.
  • Combine potatoes, broccoli, chicken broth, milk, salt, and pepper in a slow cooker.
  • Cook on low for 4-6 hours, or until potatoes are tender.
  • Stir in cheddar cheese until melted and creamy.
  • Serve hot.

Notes

For a thicker soup, you can mash some of the potatoes before adding the cheese. You can also add other vegetables, such as carrots or celery.
