Instructions
Preparation Steps
Place the cubed sweet potatoes in the crock-pot.
In a separate bowl, mix brown sugar, melted butter, cinnamon, and vanilla extract until well combined.
Pour the mixture over the sweet potatoes and stir to coat them evenly.
Cook on low for 4 hours or until the sweet potatoes are tender.
Top with mini marshmallows and cover for another 10 minutes until the marshmallows are melted.
Notes
You can spice it up with a pinch of nutmeg for added flavor.
