Ingredients
- 1 lb russet potatoes peeled and shredded
- 1 small yellow onion finely grated
- 1 large egg beaten
- 2 tbsp all-purpose flour
- 1 tsp kosher salt
- 1/2 tsp black pepper freshly ground
- 3 tbsp neutral oil for frying
Instructions
Shred the potatoes and onion, then wrap them in a clean towel and squeeze firmly until very dry.
Mix the dried potato mixture with the egg, flour, salt, and pepper until evenly combined.
Heat the oil in a large skillet over medium-high heat until shimmering.
Scoop the mixture into four portions, flatten each into a thin patty, and place in the skillet.
Cook for 4 to 5 minutes per side, turning once, until deeply golden and crisp.
Drain briefly on a paper towel and serve hot.
