In a medium bowl, combine the ground chicken, soy sauce, sesame oil, grated ginger, minced garlic, and sliced green onions. Mix well until all ingredients are evenly distributed.
Place a wonton wrapper on a clean surface. Spoon about 1 teaspoon of the chicken filling into the center of the wrapper.
Dip your finger in water and moisten the edges of the wonton wrapper. Fold the wrapper in half diagonally to form a triangle, pressing to seal the edges and remove any air pockets. You can also fold them into other desired shapes, like a purse shape, by bringing the corners together.
Repeat with the remaining filling and wonton wrappers.
Heat about 1-2 inches of vegetable oil in a deep skillet or pot over medium-high heat to around 350°F (175°C).
Carefully add the wontons to the hot oil, a few at a time, ensuring not to overcrowd the pan. Fry for 2-3 minutes per side, or until golden brown and crispy.
Remove the fried wontons with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
Serve hot with your favorite dipping sauce, such as sweet chili sauce or soy sauce.
Notes
These wontons are best served immediately after frying. For a healthier option, they can also be baked at 400°F (200°C) for 12-15 minutes, flipping halfway through, though they won't be as crispy.
