Preheat the air fryer to 400°F (200°C) for 3 minutes. Pat the pork chops dry and season both sides lightly with salt and pepper.
Place the beaten egg in a shallow bowl. In a second shallow bowl, stir together the breadcrumbs, Parmesan, garlic powder, paprika, Italian seasoning, salt, and black pepper.
Dip each pork chop into the egg, letting excess drip away, then press firmly into the Parmesan breadcrumb mixture so both sides are evenly coated.
Spray the air fryer basket with olive oil. Arrange the chops in a single layer with space between them, then lightly spray the tops.
Air fry at 400°F (200°C) for 6 to 8 minutes. Carefully flip and cook for 5 to 7 minutes more, until the crust is golden and the thickest part reaches 145°F (63°C).
Transfer the pork chops to a plate and rest for 3 to 5 minutes before serving.
