Creamy Turkey Soup

This creamy turkey soup is a perfect way to use up leftover turkey. It's rich, hearty, and packed with flavor.

Ingredients

  • 3 cups leftover turkey, shredded cooked
  • 8 cups chicken broth low sodium
  • 1 cup heavy cream or half-and-half
  • 2 cups carrots diced
  • 2 cups celery diced
  • 1 cup onion chopped
  • 2 tablespoons butter
  • 0.25 teaspoon thyme dried
  • 0.25 teaspoon black pepper freshly ground

Instructions
 

Preparation Steps

  • Melt butter in a large pot over medium heat. Add onions, carrots, and celery; cook and stir until soft, about 5 minutes.
  • Pour in chicken broth and bring to a boil.
  • Add shredded turkey, thyme, and black pepper to the pot. Reduce heat and let simmer for 20 minutes.
  • Stir in the heavy cream and simmer for another 5 minutes. Adjust seasoning to taste.

Notes

You can substitute chicken for turkey if desired.
