Instructions
Preparation Steps
Melt butter in a large pot over medium heat. Add onions, carrots, and celery; cook and stir until soft, about 5 minutes.
Pour in chicken broth and bring to a boil.
Add shredded turkey, thyme, and black pepper to the pot. Reduce heat and let simmer for 20 minutes.
Stir in the heavy cream and simmer for another 5 minutes. Adjust seasoning to taste.
Notes
You can substitute chicken for turkey if desired.
