  • 1 cup Frozen mixed vegetables Thawed
  • 0.5 cup Milk Any kind
  • 0.25 cup Shredded cheddar cheese For topping
  • 1 tsp Salt Or to taste
  • 0.5 tsp Black pepper Or to taste

Preparation Steps

  • Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  • In a large bowl, combine uncooked rice, chicken broth, cream of mushroom soup, milk, salt, and pepper.
  • Add the chicken and mixed vegetables to the bowl and stir to combine.
  • Pour the mixture into the prepared baking dish.
  • Sprinkle cheddar cheese over the top.
  • Bake for 35-40 minutes, or until the rice is cooked and the chicken is cooked through.
  • Let stand for 10 minutes before serving.

Notes

For a richer flavor, use cream of chicken soup instead of cream of mushroom soup. You can also add other vegetables, such as diced carrots or celery.
