Total: 30 minutes minutes
Ingredients
- 300 g short pasta
- 1 tablespoon olive oil
- 20 g unsalted butter
- 450 g chicken breast cut into bite-size pieces
- 2 large cloves garlic finely chopped
- 1/4 teaspoon red chili flakes
- 75 ml dry white wine
- 2 tablespoons tomato paste
- 150 g cream cheese
- 1 teaspoon dried oregano
- 100 g feta cheese crumbled
- 75 g sun-dried tomatoes chopped
- 6-8 leaves fresh basil shredded
- to taste black pepper freshly ground
Instructions
Boil the pasta in lightly salted water until al dente. Reserve 1 to 2 cups pasta water, then drain.
Heat the oil and butter in a deep skillet. Add the chicken and cook for 4 to 5 minutes, until lightly golden and cooked through.
Stir in the garlic and optional chili flakes and cook for 1 minute, until fragrant.
Pour in the wine and simmer for 1 to 2 minutes, scraping up browned bits.
Stir in the tomato paste, cream cheese, and 1 cup reserved pasta water. Bubble gently for 1 to 2 minutes.
Add oregano and feta. Simmer for another 1 to 2 minutes, until the sauce is creamy.
Toss in the drained pasta, loosening with more pasta water if needed.
Fold in sun-dried tomatoes and basil, season with pepper, and serve.
