Instructions
In a large nonstick skillet, cook the diced bacon until crispy. Transfer it with a slotted spoon to a paper-towel-lined plate to drain.
Put the sour cream, mayonnaise, sugar, apple cider vinegar, salt, and pepper in a large bowl and whisk to combine.
Add the peas, red onion, cheddar cheese, and cooked bacon to the bowl. Gently stir until everything is coated.
Cover and refrigerate for at least 1 hour. Garnish with crispy bacon and serve cold.
Notes
Chill the salad before serving so the dressing settles and the peas stay refreshing.
