Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
In a large bowl, whisk together the gluten-free flour, baking soda, and salt.
In a separate bowl, mash the bananas. Add the brown sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
In a small bowl, combine the brown sugar and cinnamon for the swirl.
Pour half of the batter into the prepared loaf pan. Sprinkle the cinnamon sugar mixture evenly over the batter. Pour the remaining batter on top.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
