  • 1 tsp Baking Soda
  • 0.5 tsp Salt
  • 3 Ripe Bananas Mashed
  • 0.5 cup Brown Sugar Packed
  • 0.33 cup Vegetable Oil
  • 2 Large Eggs
  • 1 tsp Vanilla Extract

  • 2 tbsp Brown Sugar Packed
  • 1 tsp Ground Cinnamon

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a large bowl, whisk together the gluten-free flour, baking soda, and salt.
  • In a separate bowl, mash the bananas. Add the brown sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  • In a small bowl, combine the brown sugar and cinnamon for the swirl.
  • Pour half of the batter into the prepared loaf pan. Sprinkle the cinnamon sugar mixture evenly over the batter. Pour the remaining batter on top.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
