Instructions
Preparation Steps
Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease well.
In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
Add dry ingredients to wet ingredients alternately with mashed bananas, beginning and ending with dry ingredients. Mix until just combined.
Fill muffin cups about 2/3 full.
Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
