  • 1 tsp Baking Soda
  • 0.5 tsp Salt
  • 0.5 tsp Ground Cinnamon
  • 0.5 cup Unsalted Butter Softened
  • 0.75 cup Granulated Sugar
  • 2 Large Eggs
  • 1 tsp Vanilla Extract
  • 1 cup Mashed Ripe Bananas About 2-3 bananas

Preparation Steps

  • Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease well.
  • In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
  • In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  • Add dry ingredients to wet ingredients alternately with mashed bananas, beginning and ending with dry ingredients. Mix until just combined.
  • Fill muffin cups about 2/3 full.
  • Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
