Chocolate Raspberry Cookies

Delicious fudgy chocolate cookies with a burst of fresh raspberries. Easy to make and perfect for any occasion!

  • 1 cup unsalted butter
  • 1.5 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 0.75 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup fresh raspberries

Preparation Steps

  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • Cream together the butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in the vanilla.
  • In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
  • Fold in the raspberries.
  • Drop by rounded tablespoons onto the prepared baking sheets.
  • Bake for 10-12 minutes, or until edges are set.
  • Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies are best served fresh. Store leftovers in an airtight container at room temperature.
