chimichangas recipe

A delicious recipe for homemade chimichangas, crispy flour tortillas filled with seasoned ground beef and beans, then deep-fried to perfection.

  • 1 lb Ground beef
  • 1 cup Refried beans
  • 1 tsp Chili powder
  • 0.5 tsp Cumin
  • 12 count Flour tortillas
  • 2 cups Vegetable oil for frying

Instructions
 

Preparation Steps

  • Brown the ground beef in a large skillet over medium heat. Drain off any excess fat.
  • Stir in the refried beans, chili powder, and cumin. Cook for 5 minutes, or until heated through.
  • Fill each tortilla with about 1/2 cup of the beef mixture.
  • Fold the tortillas in half, then fold the edges to seal.
  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Fry the chimichangas for 2-3 minutes per side, or until golden brown and crispy.
  • Serve immediately with your favorite toppings.

Notes

For a spicier chimichanga, add more chili powder or a pinch of cayenne pepper.
