  • 1 lb ground beef lean
  • 1 cup corn kernels fresh or frozen
  • 1 can black beans drained and rinsed
  • 1 package cornbread mix
  • 1 cup shredded cheese cheddar or your choice

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • Brown the ground beef in a skillet over medium heat until cooked through. Drain any excess fat.
  • Add corn, black beans, and taco seasoning to the skillet and stir well.
  • Transfer the beef mixture to a casserole dish and top with shredded cheese.
  • Prepare the cornbread mix according to package instructions and pour over the beef mixture.
  • Bake in the preheated oven for 30 minutes or until the cornbread is golden brown.

Notes

This casserole can be served with sour cream and fresh cilantro on top.
