This Chicken Sorrentino is a delightful blend of thinly pounded chicken breasts layered with eggplant, prosciutto, and melted mozzarella cheese, all topped with a rich marinara sauce.

  • 4 pieces chicken breasts pounded thin
  • 2 cups marinara sauce homemade or store-bought
  • 1 pound eggplant sliced into rounds
  • 4 slices prosciutto
  • 8 ounces mozzarella cheese sliced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon fresh basil chopped for garnish

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat and cook the chicken until golden brown on both sides, about 4-5 minutes per side.
  • In the same skillet, add more olive oil if necessary and cook the eggplant slices until tender and lightly browned.
  • Layer the chicken, eggplant, and prosciutto in a baking dish. Top with mozzarella slices and cover with marinara sauce.
  • Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
  • Garnish with fresh basil before serving.

Notes

This dish pairs well with a side of garlic bread and a fresh green salad.
