Chicken Shepherd's Pie
A delightful twist on the traditional shepherd's pie using chicken for a lighter version.

Instructions
Preparation Steps
Preheat the oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add ground chicken and cook until browned.
Add mixed vegetables to the skillet and cook for an additional 5 minutes.
Spread the chicken and vegetable mixture evenly in a baking dish.
Spread mashed potatoes evenly over the top of the chicken mixture.
Bake in the preheated oven for 25 minutes until the top is golden brown.
Notes
Feel free to add grated cheese on top for a crispy topping.
