Chicken Shepherd's Pie

A delightful twist on the traditional shepherd's pie using chicken for a lighter version.

  • 1.5 pounds ground chicken Preferably organic
  • 2 cups mashed potatoes prepared
  • 1 cup mixed vegetables frozen or fresh
  • 1 tablespoon olive oil extra virgin

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add ground chicken and cook until browned.
  • Add mixed vegetables to the skillet and cook for an additional 5 minutes.
  • Spread the chicken and vegetable mixture evenly in a baking dish.
  • Spread mashed potatoes evenly over the top of the chicken mixture.
  • Bake in the preheated oven for 25 minutes until the top is golden brown.

Notes

Feel free to add grated cheese on top for a crispy topping.
