This comforting chicken and rice casserole is a family favorite, featuring tender chicken pieces, creamy sauce, and fluffy rice.

  • 2.5 cups cooked chicken shredded or cubed
  • 1.5 cups long grain rice
  • 2 cups chicken broth low sodium
  • 1 can cream of mushroom soup 10.5 oz
  • 0.5 cup milk or use water
  • 1 cup shredded cheddar cheese divided
  • 1 tsp salt
  • 0.5 tsp black pepper

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine chicken, rice, chicken broth, soup, milk, half of the cheese, salt, and pepper.
  • Pour the mixture into a greased baking dish.
  • Bake in the preheated oven for 35-40 minutes, until heated through and bubbly.
  • Sprinkle the remaining cheese on top and bake for another 5 minutes, until the cheese is melted.
  • Let stand for a few minutes before serving.

Notes

You can add vegetables like peas or carrots for extra nutrition and color.
