Preparation Steps
In a large pot or Dutch oven, combine chicken broth, carrots, celery, onion, thyme, and rosemary. Bring to a boil.
Add the chicken pieces to the boiling broth. Reduce heat to a simmer, cover, and cook for 15-20 minutes, or until chicken is cooked through.
While the chicken is cooking, prepare the dumplings. In a medium bowl, whisk together flour, baking powder, and salt.
Add milk and melted butter to the dry ingredients and stir until just combined. Do not overmix.
Drop spoonfuls of dumpling dough into the simmering chicken mixture. Cover and cook for 15-20 minutes, or until dumplings are cooked through.
Stir in frozen peas during the last 5 minutes of cooking. Season with salt and pepper to taste.
Notes
For extra flavor, brown the chicken pieces in the pot before adding the broth.
