  • 1.5 lbs Boneless, skinless chicken thighs Cut into 1-inch pieces
  • 8 cups Chicken broth Low sodium preferred
  • 1 cup Diced carrots
  • 1 cup Diced celery
  • 0.5 cup Diced onion
  • 0.5 tsp Dried thyme
  • 0.25 tsp Dried rosemary
  • 1 cup Frozen peas

Dumplings

  • 1.5 cups All-purpose flour
  • 1.5 tsp Baking powder
  • 0.5 tsp Salt
  • 0.75 cup Milk
  • 6 tbsp Butter Melted

Preparation Steps

  • In a large pot or Dutch oven, combine chicken broth, carrots, celery, onion, thyme, and rosemary. Bring to a boil.
  • Add the chicken pieces to the boiling broth. Reduce heat to a simmer, cover, and cook for 15-20 minutes, or until chicken is cooked through.
  • While the chicken is cooking, prepare the dumplings. In a medium bowl, whisk together flour, baking powder, and salt.
  • Add milk and melted butter to the dry ingredients and stir until just combined. Do not overmix.
  • Drop spoonfuls of dumpling dough into the simmering chicken mixture. Cover and cook for 15-20 minutes, or until dumplings are cooked through.
  • Stir in frozen peas during the last 5 minutes of cooking. Season with salt and pepper to taste.

Notes

For extra flavor, brown the chicken pieces in the pot before adding the broth.
