Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
In a large bowl, beat the butter, brown sugar, and granulated sugar until creamy. Beat in the egg and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips and dried cherries.
Drop tablespoon-sized mounds of dough onto prepared baking sheets, spacing them about 2 inches apart.
Bake for 9-11 minutes, or until cookies are golden brown around the edges. Allow to cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
