In a large bowl, dissolve yeast and sugar in warm water. Let stand for 5 minutes, until foamy.
Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms. Turn dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic.
Place dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
Preheat oven to 400°F (200°C). Punch down dough and divide into 16 equal pieces. Roll each piece into a long rope and place on a baking sheet lined with parchment paper.
In a small bowl, combine melted butter and minced garlic. Brush over breadsticks. Sprinkle with mozzarella cheese and parsley.
Bake for 15-20 minutes, or until golden brown and cheese is melted and bubbly. Serve warm.
