Cheeseburger Gnocchi

This cheeseburger gnocchi dish combines the flavors of a classic cheeseburger with soft and fluffy gnocchi for a comforting meal.

  • 1.5 pounds ground beef preferably 80% lean
  • 1 package potato gnocchi store-bought or homemade
  • 1 cup shredded cheddar cheese sharp or mild, as preferred
  • 1 cup diced tomatoes canned or fresh

Preparation Steps

  • In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  • Add diced tomatoes to the skillet and stir to combine. Simmer for 5 minutes.
  • Meanwhile, cook the gnocchi according to package instructions. Drain and set aside.
  • Stir the cooked gnocchi into the beef and tomato mixture. Sprinkle shredded cheddar cheese over the top and cover to melt the cheese.

Notes

For an extra kick, add a dash of hot sauce or sprinkle with sliced jalapeños before serving.
