carrot cake bars

Delicious and easy carrot cake bars with a cream cheese frosting. Perfect for a quick dessert or snack!

Ingredients
  

Main Ingredients

  • 1.5 cups All-purpose flour
  • 1.5 teaspoons Baking soda
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
  • 1.5 cups Sugar
  • 0.75 cup Vegetable oil
  • 3 Large eggs
  • 1.5 cups Shredded carrots
  • 1 cup Walnuts, chopped optional

Cream Cheese Frosting

  • 8 ounces Cream cheese, softened
  • 0.5 cup Butter, softened
  • 3 cups Powdered sugar
  • 1 teaspoon Vanilla extract

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, whisk together flour, baking soda, cinnamon, and salt.
  • In a separate bowl, combine sugar, oil, and eggs. Mix well.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Stir in carrots and nuts (if using).
  • Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool completely before frosting.

Frosting Steps

  • In a large bowl, beat cream cheese and butter until smooth.
  • Gradually add powdered sugar and vanilla extract and beat until smooth and creamy.
  • Spread frosting evenly over cooled bars. Cut into squares and serve.

Notes

Store leftover bars in an airtight container in the refrigerator.
