Cajun Ground Chicken and Rice

This Cajun Ground Chicken and Rice dish is a flavorful and easy-to-make meal perfect for weeknight dinners. It combines spicy Cajun seasonings with ground chicken and fluffy rice for a satisfying experience.

  • 1.5 pounds ground chicken lean
  • 1 cup long-grain white rice uncooked
  • 2 cups chicken broth low sodium
  • 1 tablespoon olive oil extra virgin
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon Cajun seasoning to taste
  • 1 medium bell pepper chopped
  • 0.5 cup frozen peas thawed

Preparation Steps

  • Heat olive oil in a large skillet over medium heat. Add onion and garlic, and sauté until onion is translucent.
  • Add ground chicken to the skillet and cook until browned.
  • Stir in bell pepper, Cajun seasoning, and rice. Cook for another minute.
  • Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
  • Add peas and continue to cook for another 5 minutes or until rice is tender.
  • Fluff rice with a fork and serve hot.

Notes

For a spicier kick, add more Cajun seasoning or a pinch of cayenne pepper.
