Instructions
Preparation Steps
Heat olive oil in a large skillet over medium heat. Add onion and garlic, and sauté until onion is translucent.
Add ground chicken to the skillet and cook until browned.
Stir in bell pepper, Cajun seasoning, and rice. Cook for another minute.
Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
Add peas and continue to cook for another 5 minutes or until rice is tender.
Fluff rice with a fork and serve hot.
Notes
For a spicier kick, add more Cajun seasoning or a pinch of cayenne pepper.
