Bruschetta Chicken

A delicious and easy bruschetta chicken recipe that's perfect for a weeknight meal.

  • 1.5 pound boneless, skinless chicken breasts
  • 0.5 cup bruschetta topping store-bought or homemade
  • 0.25 cup shredded mozzarella cheese
  • 2 tablespoon olive oil
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • Place chicken breasts in a baking dish. Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper.

  • Bake for 20-25 minutes, or until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • Remove chicken from oven. Spoon bruschetta topping evenly over each chicken breast.

  • Sprinkle with mozzarella cheese.

  • Return to oven for 5 minutes, or until cheese is melted and bubbly.
