Instructions
Preparation Steps
Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, beat the eggs and then stir in the milk and vegetable oil.
Add the wet ingredients to the dry ingredients and stir until just combined.
Gently fold in the blackberries.
Divide the batter evenly among the prepared muffin cups.
Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.
Notes
These muffins are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
