Preparation Steps
Combine sugar, corn syrup, and water in a saucepan over medium heat. Bring to a boil, without stirring.
Continue to boil, without stirring, until the mixture reaches 245°F (118°C) on a candy thermometer.
Remove from heat and carefully whisk in the heavy cream, butter, and salt.
Pour into a buttered 8x8 inch baking dish and let cool completely before cutting into squares.
Notes
Store caramels in an airtight container at room temperature for up to a week.
