Best Caramels Recipe

  • 0.5 cup light corn syrup
  • 0.25 cup water
  • 1 cup heavy cream
  • 0.5 cup butter
  • 0.5 teaspoon salt

Preparation Steps

  • Combine sugar, corn syrup, and water in a saucepan over medium heat. Bring to a boil, without stirring.
  • Continue to boil, without stirring, until the mixture reaches 245°F (118°C) on a candy thermometer.
  • Remove from heat and carefully whisk in the heavy cream, butter, and salt.
  • Pour into a buttered 8x8 inch baking dish and let cool completely before cutting into squares.

Notes

Store caramels in an airtight container at room temperature for up to a week.
