  • 1 cup Gluten-Free All-Purpose Flour Use a blend that contains xanthan gum.
  • 1 cup Rolled Oats Use certified gluten-free oats if necessary.
  • 1 cup Brown Sugar Packed.
  • 0.5 cup Granulated Sugar
  • 0.75 cup Butter Softened.
  • 2 Large Eggs
  • 2 tsp Vanilla Extract
  • 1 tsp Baking Soda
  • 0.5 tsp Salt
  • 1 cup Chocolate Chips Semi-sweet or milk chocolate.

Preparation Steps

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate bowl, whisk together the gluten-free flour, oats, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Stir in the chocolate chips.
  • Drop by rounded tablespoons onto the prepared baking sheets.
  • Bake for 10-12 minutes, or until the edges are golden brown.
  • Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For a chewier cookie, chill the dough for 30 minutes before baking.
