Preparation Steps
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine rolled oats, pumpkin puree, brown sugar, melted coconut oil, pumpkin pie spice, baking soda, salt, and vanilla extract.
Mix well until all ingredients are fully incorporated.
