Beet Salad Recipe

A vibrant and refreshing beet salad perfect for a light lunch or side dish. Sweet beets are paired with tangy feta cheese and crunchy walnuts for a delightful flavor combination.

  • 1 lb Beets
  • 0.5 cup Walnuts Toasted
  • 4 oz Feta Cheese Crumbled
  • 2 tablespoons Olive Oil
  • 1 tablespoon Balsamic Vinegar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Preparation Steps

  • Preheat oven to 400°F (200°C). Wash and scrub beets, then wrap in foil.
  • Roast beets for 45-60 minutes, or until tender when pierced with a fork.
  • Let cool, then peel and dice beets.
  • Toast walnuts in a dry pan until fragrant.
  • In a bowl, combine beets, walnuts, feta cheese, olive oil, balsamic vinegar, salt, and pepper.
  • Gently toss to combine.
  • Serve immediately or chill for later.

Notes

For a spicier kick, add a pinch of red pepper flakes. You can also substitute goat cheese for feta.
