Preparation Steps
Preheat oven to 400°F (200°C). Wash and scrub beets, then wrap in foil.
Roast beets for 45-60 minutes, or until tender when pierced with a fork.
Let cool, then peel and dice beets.
Toast walnuts in a dry pan until fragrant.
In a bowl, combine beets, walnuts, feta cheese, olive oil, balsamic vinegar, salt, and pepper.
Gently toss to combine.
Serve immediately or chill for later.
Notes
For a spicier kick, add a pinch of red pepper flakes. You can also substitute goat cheese for feta.
