Preparation Steps
Season beef with salt and pepper. Brown beef in butter over medium-high heat. Remove beef from pan and set aside.
Add mushrooms to the pan and cook until tender. Stir in flour and cook for 1 minute.
Gradually whisk in beef broth until smooth. Bring to a simmer, then return beef to the pan.
Reduce heat to low, cover, and simmer for 20 minutes, or until beef is tender. Stir in sour cream and heat through. Serve over egg noodles or rice.
Notes
For a richer flavor, use a combination of beef broth and red wine.
