Beef Enchilada Dip with Cheddar and Green Chiles

Ingredients
- 1 lb ground beef cooked and drained
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 10-oz can enchilada sauce
- 1 8-oz package cream cheese softened
- 1 10-oz can Rotel diced tomatoes and green chilies drained
- 2 cups shredded cheddar cheese
- 2 tablespoons sliced green onions for garnish
- 2 tablespoons chopped cilantro for garnish
Instructions
Heat the oven to 350°F and lightly coat a small baking dish with nonstick spray.
Brown the ground beef in a large skillet over medium-high heat, breaking it into small crumbles. Drain excess grease.
In a large bowl, stir together the chili powder, cumin, garlic powder, enchilada sauce, softened cream cheese, and drained Rotel.
Fold in the cooked beef and shredded cheddar until evenly combined.
Spread the mixture into the prepared baking dish and bake for about 20 to 25 minutes, until hot and bubbling at the edges.
Rest for a few minutes, then garnish with green onions and cilantro. Serve warm with tortilla chips.
