Beef Enchilada Casserole

This Beef Enchilada Casserole is a delicious and easy-to-make dish perfect for any night of the week!

  • 1.5 pounds ground beef lean
  • 8 ounces enchilada sauce mild or medium
  • 12 pieces corn tortillas
  • 2 cups shredded cheddar cheese

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  • Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  • Layer half of the tortillas over the sauce, followed by half of the beef and half of the cheese.
  • Repeat the layers with remaining ingredients, finishing with cheese on top.
  • Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes, until cheese is bubbly.
  • Let cool for 10 minutes before slicing and serving.

Notes

Feel free to add chopped green onions or sour cream as a topping for extra flavor.
