Beef Birria Tacos

  • 3 lbs Beef chuck roast
  • 1 cup Dried guajillo chiles Stemmed and seeded
  • 1 cup Dried ancho chiles Stemmed and seeded
  • 0.5 cup Dried pasilla chiles Stemmed and seeded
  • 4 cloves Garlic Minced
  • 1 tsp Dried oregano
  • 1 tsp Cumin
  • 1 tsp Black pepper
  • 1 tsp Salt
  • 8 cups Beef broth
  • 12 corn tortillas Corn tortillas
  • 1 cup Onion Chopped
  • 1 cup Cilantro Chopped

Preparation Steps

  • Combine chiles with boiling water to rehydrate.
  • Blend rehydrated chiles with garlic, oregano, cumin, pepper, and salt until smooth.
  • Sear beef on all sides in a large pot or Dutch oven.
  • Add the chile mixture and beef broth to the pot. Bring to a simmer, then reduce heat to low, cover, and cook for at least 2 hours or until beef is very tender.
  • Shred beef and serve in warm corn tortillas. Top with chopped onion and cilantro.

Notes

For a richer flavor, consider adding a bay leaf or a few cloves to the broth.
