Heat the oven to 375°F and lightly grease a 9-by-13-inch baking dish.
Whisk the oats, baking powder, cinnamon, nutmeg, and salt in a bowl.
In a second bowl, whisk the pumpkin, milk, eggs, maple syrup, and vanilla until smooth.
Pour the wet mixture into the dry mixture and stir until evenly combined, then fold in the pecans.
Spread the mixture in the prepared dish and bake for 35 minutes, until set in the center and lightly golden.
Cool for a few minutes, then slice and serve warm with milk, yogurt, or extra pecans.
Notes
For a softer center, serve the oatmeal warm; it firms as it cools.
