Baked Meatballs

Juicy and flavorful baked meatballs made with ground beef, breadcrumbs, herbs, and spices. A healthier alternative to frying, perfect for pasta, sandwiches, or as an appetizer.

  • 1 pound ground beef (80/20)
  • 0.5 cup breadcrumbs
  • 0.25 cup milk
  • 1 large egg
  • 0.25 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil (for brushing)

Preparation Steps

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a small bowl, combine breadcrumbs and milk. Let sit for 5 minutes to soften.
  • In a large mixing bowl, combine ground beef, soaked breadcrumbs, egg, onion, garlic, oregano, basil, salt, pepper, Parmesan cheese, and parsley. Mix gently with your hands until just combined. Do not overmix.
  • Shape the mixture into 24 equal-sized balls, about 1 1/2 inches in diameter.
  • Place meatballs on the prepared baking sheet, leaving space between each. Lightly brush or spray with olive oil.
  • Bake for 20–25 minutes, or until meatballs reach an internal temperature of 160°F (71°C) and are browned on the outside.
  • Remove from oven and let rest for 5 minutes before serving.

Notes

Serve with marinara sauce over pasta, in a sub roll, or as an appetizer with dipping sauce.
