Bacon Cheddar Twice Baked Potato

Crispy bacon and sharp cheddar cheese combine for a delicious twice-baked potato experience.

  • 4 large russet potatoes Russet Potatoes
  • 0.5 cup Bacon, cooked and crumbled
  • 1 cup Cheddar cheese, shredded
  • 0.25 cup Sour cream
  • 2 tablespoons Green onions, chopped

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • Bake potatoes until tender, about 1 hour.
  • Cut potatoes in half lengthwise and scoop out the flesh, leaving about 1/4-inch shell.
  • Mix potato flesh with bacon, cheese, sour cream, and green onions.
  • Fill potato skins with mixture.
  • Bake for 20 minutes, or until heated through and cheese is melted and bubbly.
